Easy and Healthy Black Bean Brownie Recipe

Easy and Healthy Black Bean Brownie Recipe… no seriously. Easy, and ok.. health(IER). But I honestly PREFER these over full fat super naughty make you feel guilty brownies. And these are 100% guilt free, chocolatey, rich, fudgy and thick. Just how they should be!

Alright. There’s a few things I’m #OBSESSED with .. let me start in alphabetical order.

A – apples. I have one a day.

B – BROWNIES (the whole reason you’re reading this… ) and booty workouts.

D – Dogs. I love anything with fur. Like let me squeeze you until your eyes pop out kinda love.

H – Harry Potter everything all the time.

P – pancakes and puppies. And psst. You can order Pancake puppies from Denny’s, they’re fantastic.

U – Unicorns. They’re real. This is not up for debate.

So have you heard of #ChocolateCoveredKatie ?? I have to admit… that girl is the ultimate bakinista (that’s baker bad ass in baking lingo) and she knows her recipes and ingredients like I know my workouts and pre-workout.

So naturally, I wanted to try her recipe AGAIN… but the last time I made them, while they were scrumptious, we’re really small and thin… and I like my brownies like I like my wallet, THICK.

So then I stumbled across another recipe that looked super promising because all you needed was a few select ingredients. HOWEVER, the amount of melted chocolate that was required would probably clog my ever loving chocolate arteries. And I’m currently focusing on getting back on track with eating at home more, and remaking some of my favorite recipes.
And since I’m a genius (er…desperate chocoholic with a knack for kitchen and baking experiments – think Rachel Ray meets Bill Nye – ok that may be a stretch and one helluva compliment I’m giving myself but these brownies get 5 STARS so whatever) I decided to MERGE these two recipes together to create…

I could go on but for BROWNIES SAKE I’ll shut up and give you the recipe. 

The Ultimate Brownie Recipe Hybrid. 

You Need:

  • 2 Eggs (I use Costco Kirkland organic #trendy and #thrifty)
  • 1 (15 oz) can of black beans ( I use Costco organic – see a trend here folks? #CostcoForLife) drained and cleaned REAL WELL.
  • 1/2 cup of melted coconut oil ( Again, you can find a two pack of coconut oil at Costco for cheap and its the GOOD stuff)
  • 1 tsp of vanilla extract
  • 1/2 cup of melted chocolate chips (microwave in increments of 30 seconds until smooth, careful to not burn)
  • 1/4 cup of agave or honey
  • 3/4 cup of oat flour (you can blend this up quickly)
  • 1/2 tsp of salt
  • 1/2 tsp of baking powder
  • 2 TBSP of cocoa powder
  • 1/2 cup of chocolate chips
  • Optional: I added walnuts and a handful of chocolate chips

Step 1: Throw ALL THIS (except the nuts and non melted chocolate chips) in a food processor (use blender at your own frustrating risk.. as in.. don’t ;-)… unless you use in steps and throw in a bowl).

{ If you’re using a blender } Here’s how I would do it : Blend black beans separate. Put in bowl. Blend oats separate. Put in bowl. Blend coconut oil, eggs, vanilla, honey and melted chocolate chips together. Combine all ingredients. Hand Mix.

Step 2: Once you have combined ALL ingredients, THEN add the walnuts and extra chocolate chips and pour in an 8×8 pan. Preheat oven to 350 degrees and bake for 18 minutes.

Step 3: Be Patient. Pull out. Let cool. Literally.. let them cool, because while they DO taste quite chocolatey, fudgy and oh so good… they taste a zillion times more amazing when they’re cooled off. I have to swat my own hand and my fiancés away repeatedly until I knew they were ready. Otherwise when you rush the process, you miss the BEST taste. Be patient fellow chocoholic fans and significant others.
